On the Southside of Chicago new roots begin to grow and green is breaking ground.   In a former meat packaging plant left to stand as remembrance of an once bustling industry, now sees new opportunities.  The 93,500 s.q meat packaging facility now named The Plant seeks to redefine the area, create jobs, and incubate new green food start-ups.   The facility that is currently under on-going construction, seeks to reuse all materials in the building with zero-waste goals.    While currently The Plant  is home to 2 bakeries, 2 hydroponic, a Kombucha producer and an Aquaponic.   They are seeking new business to come in by offering low rent, shared kitchen, and green incentives.   They hope soon to build a brewery and a mushroom facility.  While The Plant seeks to incubate small business they also see a opportunity to educate the community and conduct research.
